“Une femme, un esprit, un style” is the motto of this grower-producer: since founder Jules Lassalle died in 1982, the winemaker has always been female – now it’s Jules’s grandaughter at the helm. A blend of all three Champagne grapes with three years sur lies, this is fresh, fruity, creamy, and toasty. Dosage of 9g/L balances the acidity and gives the wine some richness. Engaging and fun, and absolutely fantastic bubbles at this price.
