“CUVÉE TRADITION”

For Philippe Collin, a native of Champagne, he jumped at the chance to start a domaine in the birthplace of sparkling wine, Limoux. The gravelly soils are planted to Chardonnay, Pinot Noir and Chenin Blanc, forgoing the native Mouzac. This is a blend of mostly Chardonnay and Chenin with an aromatic creamy mousse of green apples, creamy orange zest and wet river rock. Great acidity.
