    Winemaker Erin Pooley (her middle name is Frances and she’s not the tallest) is from Sydney, near Hunter Valley where extraordinarily distinctive Sémillon is made. Taking inspiration from her homeland, she picks early to ensure high acidity and low alcohol (just 10.9%).     The grapes that make up this dry white wine are mostly Gros Manseng with some Courbu. The vineyards are netled into the Pyrénées mountains and they produce a wine that is both rustic and fresh. Bright flavors of raw honey, yellow apple, pear, cantaloupe, tangerine and mango show well right along side honeysuckle and flowers.
