Valentin Zusslin Bollenberg Sylvaner Alsace 2014

Biodynamically grown on the south-facing Bollenberg lieu-dit in Orschwir in the Vosges Mountains of Alsace. The fermentation is done with native yeasts before aging in large Vosges casks, which create creamy flavors of golden apples, ripe peach, orange and a touch of grapefruit. The additional bottle aging adds layers of caramel, baked pastries, and a savory herbaciousness. This is an exciting Sylvaner with layers of depth and complexity.
