Uncharted Petillant Naturel Russian River Valley 2017

Jason Holman used to make just a handful of cases of his Pét-Nat – an historic style of lightly sparkling wine where there’s just one fermentation, all in the bottle. Now he’s expanded to a massive 66 cases, and we’re lucky to have some in the shop. This is so drinkable: fruity and aromatic, with crisp green and red apples and pears. It almost smells sweet but is completely dry on the palate. Point of comparison: a really good dry cider.
