The Southing is sourced exclusively from the Sea Smoke Estate in the Santa Rita Hills, sorted in the vineyard, destemmed, and aged for 16 months in in French oak barrels, 28% new. The goal is to create the ideal marriage of complexity and elegance. The ever-changing nose exhibits watermelon, jasmine, Victoria plum; and exotic spices. The fine tannins and minerality are enhanced by the vineyards characteristic cool climate acidity.
