Self-taught winemaker (day job: airline pilot) Mark Finver buys fruit from El Dorado County and ferments this wine long and cold in stainless steel and neutral oak, with no ML. The result is crisp, rather than creamy, Viognier. (It has the body of a light chardonnay.) Get ripe peach, tangerine and honeyed apricot with zippy acid. 75 cases.
