Pavi "Due Sorelle" Vin Santo Napa Valley NV

Napa’s version of Tuscany’s famous dessert wine. Though traditional Vin Santo is made using trebbiano or malvasia, this is made of 100% semillon. The grapes are laid out on mats in order to tranform them to raisins before fermention. This prcess gives the wine its hazelnut, burnt almond and honey notes. Those notes are all restrained by the apricot, peach, and quince paste aromas. Try this the tradiional way with biscotti!
