Paul Lato “Cavatina” Cabernet Sauvignon Napa 2019

A combination of fruit from the cooler region of Oak Knoll and high elevation of region Howell Mountain. This is not “Valley Floor” fruit, it is full of restraint and depth and nuance. This balance of earth and fruit is rarely found in Napa Cab’s. Dark and inky, yet light and enveloping on the palate. More herbs than fruit on the nose, with plums, mulberries and violets. Crushed rocks, black tea and pencil shavings, descriptors typically reserved for Bordeaux are found here, and it’s such a great experience.
