Pascal Janvier Cuvee Silex Jasnieres Loire 2018

This "Cuvée du Silex" is the reserve bottling of Pascal Janvier. The soils are flint-dominated and the resulting minerality is astounding. Made from Chenin Blanc, from the tiny appellation of Jasnières due north of Vouvray. An unctuous white that's full of raw honey, chamomile, and white flowers. Delicious, supple, and an excellent companion to soft and hard cheeses.  Just because you have never heard of it, doesn't mean it isn't worthy.
