Carbonic maceration is all the rage these days, and why not when most bottles are purchased and consumed the same day? The process often leads to a fruitier, softer style that expresses the freshness of the grape. This is not all fruit though: tobacco, leather, and earth notes are intertwined with crisp cherries and raspberries. There is no sulfur added which is another reason to drink it sooner rather than later. Only 70 cases made.
