“PAAR”
The name Paar represents the pairing of the two grapes Pinot Blanc (60) and Auxerrois (40) grown on clay-limestone soils. Farmed biodynamically since 2019, the vines are over 50-year-old. Only stainless steel is used for the juice that is raised on its fine lees for a touch of funk with chalky aromas and richness. Floral notes from the PB pair nicely with the grippy acid that the Auxerrois presents.
