Continuing his fascination with Italian wines, Dan Petroski makes this delicious vermouth from Fruilano. The wine is aged for six months before being macerated for another six with aromatic herbs and spices, including Indian coriander, nutmeg, orange peel, and quassia wood. A small percentage of residual sugar softens the bitterness. A classic aperitivo served chilled but also a great alternative in a martini.
