Les Vins de Martine Chablis 2015

This has everything we want from Chablis, a wine that expresses its terroir in the subtlest manner possible. The lean, mineral, stone, steel texture grips the palate, the mouth-wateringly high acidity rounded out by light green apple and lemon aromas and given some weight and a doughy texture by 6 months lees ageing, followed by a long finish. Classic Chablis, to be drunk with oysters.
