The Les Grandes Crayères Blanc de Blancs is part of the Terroir series; it comes from a western slope of Chavot in Campanian chalk. The wine is delicate and structured, with 3-4g /L dosage and 30 months lees aging. Just brimming with brioche and biscuits, balanced out with tart green apples and chalky tree fruits. The house’s standard oak barrel fermentation shines along with striking lemon acidity.
