Kalin, famous for releasing their wines at full maturity, when UMAMI is at its height. "CH" is for "Charles Heintz" Vineyard, West Sonoma Coast. Yes, it's mature, yet is keeping a freshness and energy about it. Smell and taste spiced apple, preserved lemon, toasted bread crust, roast hazelnuts, fresh lemon zest (yes, both fresh & preserved). Bright "snap" of acidity on the roof of the mouth, then a dried mushroom "umami" 40 second finish.
