Merlot and Cabernet Sauvignon grapes macerated for 3-4 days, the fermentation stopped by adding four-year-old cognac. The result is a rich, complex liqueur full of aromas: cherries, blackcurrants, prunes, hazelnuts, walnuts, cloves, toffee, licorice, tarragon, and all-spice to name a few. Acidity from the unfermented grape must is very fresh, lifting those intense flavors. Drink as a digestif or with chocolate.
