Domaine de la Saraziniere “Le Pavillon” Macon Bussieres 2020

Le Pavillon is a marriage of two parcels, one with 70-year-old vines and the other with 15-year-old vines. It is vinified and aged entirely in stainless steel tank where it remains from 12 to 18 months on the lees. To quote the Domaine, “Like drinking liquefied limestone with fleshy apple and melon undertones.” The tropical side of the grape is a perfect contrast to the minerals and high acid; pineapple, lychee, mango and a richly textured leesy quality.
