The grapes are picked late into October and November to ensure proper sugar concentration and development of Botrytis. The Symphonie de Noviembre is 100% Petite Manseng picked the first week of November. Bottled after two winters, it is lush and balanced. The acidity provides a gentle backdrop to the intense flavors of pineapple, honey, white peach, and milky cereal. There’s enough stuffing in this wine to be a standalone dessert but has enough grace to pair with Argentinian churrasco or foie gras.
