Dila-O Saperavi Kakheti 2021
A Saperavi that sees some of the traditional techniques, but in moderation. There is a one month fermentation in underground qvevri, then it is transferred to stainless steel for additional aging. The dark and inky characteristics of the grape are clear indicators of the roasted coffee, chestnuts, hickory, plum skins and blackberry. The fruit is ripe with just the right amount of funky clay characteristics. The perfect introduction to qvevri and Saperavi.
