Bual is the grape. It's one of the richest, but not the sweetest, of the Madeira grapes. Classic dark honey, roasted almond, toffee and dried citrus peel flavors. Great richness and complexity. Great match with aged Pecorino, Epoisses and Roquefort. And roast cashews/pistachios. And foie gras.
