COS Pithos Bianco Skin Contact Grecanico Sicily 2020

With a name like Pithos the obvious aging vessel for this is amphora, and the 100% Grecanico spends seven months in amphorae, followed by 3 months in bottle. The spontaneous fermentation is left on the skins for 15 days and an additional 30 days in the clay vessels.  The wine holds an intense gold color with aromas of yellow apples, jack fruit, and dried apricots.  Citrusy and creamy with a spicy, grippy savory note.
