This Pechuga uses a once-distilled batch of wild harvested Papalote as the base spirit. For the second distillation raw chicken, green apple, plátano macho, star anise, fennel, cinnamon, chocolate, and almonds, among other ingredients, are added to the boiling chamber of a custom-made three-plate stainless steel & copper still. Aromas of anise and cinnamon. The palate has strong notes of baking spices and green apple. Just 203 liters made for 2019.
