Mathilde Savoye is a sensory producer making only 1,600 bottles for this 100% Pinot Meunier from the Marne Valley. The extra brut has a telling 3g/L dosage and spends 27 months on its lees. A beautiful, expressive, and aromatic nose belies the acute acidity, slicing through the delicate mousse and creamy texture. Apricot, tangerine, peach, orange citrus and white flowers. A very lightly oxidized style provides additional brioche, peanut skin aromas and a touch of smoke.
