Case Paolin Asolo Prosecco Superiore NV

This is one of the best Proseccos we have tried in a long time, drier and a little more serious than is often the case. Unusually fermented in tank twice after 3 to 5 hours skin contact to give it more structure and depth, it’s still fresh, fruity, and floral with aromas of green apple, pear, peach, and honeysuckle, with a spicy tingly edge on the palate. A touch of sweetness (7g/L) is very well balanced by lively acidity and ripe fruit. Great afternoon wine or as an aperitivo.
