Now this is fun. Local husband and wife team, Dan and Jacqueline Person, love Albariño so much that they wanted to make California’s first sparkling version. It spends just 3 months on the lees, giving the wine some structure and toasty texture, but this is all about the wine’s freshness: apples, pears, peaches, honeysuckle, jasmine, and a touch of cinnamon. 3g/L dosage – so completely dry. As the label indicates, drink with octopus.
