The trend in north-east Italy when working with the rather neutral Ribolla Gialla is to leave the juice in contact with the skins, and it’s a trend that’s catching on here. This spends 15 days on skins, followed by 15 months in neutral oak vessels, with no added sulfur at any point. Yellow in appearance, with aromas of grape skins, smoke, nutmeg, ginger, and roasted almonds, followed by a grainy texture and lightly chewy palate. Just 70 cases made.
