Located in the central Hyogo prefecture, the brewery uses local mountain basin water, a local variety of rice called Hyogo Ayama milled to 50%, alongside selected yeast Kyokai #901. The result is an aromatic fruit-fest – strawberry, melons, dark cherries, a muscat lift with a slight dusting of dark cocoa powder. The mouth is equally complex with melon and strawberry taking the forefront with a crisp mineral character and a dry engaging finish.
